New Coffees

Out This Week

Four coffees currently roasting at Northern Weather.

VAN for the everyday, FLOWERS for something brighter, PIGEONS for the fruitier end of things, and FUTURE DECAF for drinking coffee without quite so much coffee.

NORTHERN WEATHER

A CHANGE IN THE WEATHER

Field Day is becoming Northern Weather.

Same roastery, same bloke, same coffee. A new name and a slightly different outlook.

AFTER 347 MONDAYS, FIELD DAY COFFEE IS CHANGING TO NORTHERN WEATHER COFFEE.

Same bloke roasting coffee. No guiding principle other than to do good work. The Roastery is getting a lick of paint. A few new things are getting installed. New packaging soon, just stuff we’ve being trying to do for yonks.

The main thing remains operational: the coffee.

NORTHERN WEATHER - Top shelf coffee by bottom shelf people.

FLOWERS
from £9.00

Flowers

Roast: Light / Medium

Let the wind be your friend.

Some coffees arrive shouting about strawberries, wine gums and anaerobic fermentation. Flowers has been asked to keep the noise down.

It is clean, sweet and quietly interesting. The sort of coffee that tastes good before you have found the correct adjective for it. Delicate enough to drink black, substantial enough to please the milkman, and remind you that it is still coffee.

No bouquet necessary.

Current coffee selection.

Community Lot. Colombia. Popayan Reserve. Washed process. Mixed Varieties

WASHED PROCESS
CLEAN · COMPOSED

Roasted in Penistone, South Yorkshire.

Nice as Espresso or Filter Coffee.

Notes: A bright seasonal coffee producing a clean and bright cup, with caramel, soft citrus and floral notes

Espresso Guide: Start with 18g in / 36g out / 28 - 32 second extraction.

Filter Guide: 60g coffee to 1 litre of water, just off the boil.

VAN (Daywork)
from £9.00

VAN (Was Daywork)

Medium roast

Sweet, steady espresso.

One coffee. Most jobs.

Our most popular coffee. Brazil always forms the base, with the accompanying coffee changing alongside the harvest calendar.

Chocolatey, forgiving and reassuringly consistent. Built for espresso. Good with milk, smooth served black and very nice as a full-bodied filter.

Milk Chocolate · Caramel · Biscuit

Current components

Brazil — Nikolas Elias

Natural process · Mild anaerobic fermentation

Colombia — Popayán Reserve

PIGEONS
from £12.00

Pigeons

Roast: Medium

Local character. International coffee.

Pigeons are underestimated, remarkably adaptable and generally found wherever people are getting something to eat. We respect the system.

Pigeons is Northern Weather’s moving position for coffees with a little more character: seasonal arrivals, unusual lots and things we believe deserve releasing into the general population.

The coffee may change. The name stays above the door.

Available until it flies off.

Nice as Espresso or a full bodied Filter.

Notes: Dark Chocolate cream biscuit. Still retains a very pleasant but mild acidity.

CURRENT COFFEE

The present edition was grown in Colombia by Arturo Arango and processed naturally.

Drying the coffee inside its fruit gives it plenty of sweetness, ripe fruit and a little more volume than a very tidy washed coffee. Interesting without becoming an endurance event.

FUTURE DECAF
from £10.00

Future Decaf

Roast: Medium

A decaf coffee deservedly on the top shelf, with its caffeinated partner.

Tomorrow still has to happen.

Decaf has spent years being treated like the children’s table of coffee. Thin, joyless and only offered after somebody says, “I really shouldn’t.”

Future Decaf is the real thing with considerably less caffeine. Sweet, balanced and roasted with the same attention as everything else.

Drink it after dinner, before bed or at nine in the morning if you simply enjoy making your own decisions.

Nothing missing except most of the problem.

Sleep remains possible.

SUBTRACTION

Roast: Medium

Some caffeine. Not all of it.

A half-caf coffee made from equal parts VAN and FUTURE DECAF.

Sweet, chocolatey and steady. Built for afternoons, evenings and those occasions when another coffee sounds like a good idea but the full consequences do not.

It tastes like coffee because it is coffee. We’ve simply removed a considerable part of the problem.

Good with milk. Smooth served black. Nice as espresso or a full-bodied filter.

Notes: Milk Chocolate · Caramel · Biscuit.

Things may improve after coffee.

Brighter Later is the lively one. Clean, juicy and carrying considerably more optimism than its roaster.

It has the brightness people mean when they talk about acidity, without becoming a glass of lemon juice somebody has charged you five pounds for.

Brew it carefully if you enjoy that sort of thing. Put it in a cafetière if you don’t. It remains coffee either way.

The morning cannot make any promises. This can help.

CURRENT COFFEE

The first edition will be a clean, washed coffee from East Africa. Full country, producer and harvest information will be published before roasting.

PRE-ORDER

Available to buy now. Roasted and dispatched from early September 2026.

For people who prefer their coffee to taste unmistakably like coffee.

At some point, dark roasting became something speciality coffee had to apologise for. We have decided not to.

Darkness begins with the same dependable idea as WORK, then stays with the roaster a little longer. More chocolate, more body and considerably less discussion about acidity.

It cuts through milk, works well in espresso and remains reassuringly present in a large mug.

Not burnt. Not frightened of the heat either.

CURRENT COFFEE

This edition combines coffee from Brazil and Costa Rica, roasted further for additional chocolate, body and weight.

Life through a filter.

LP is our all-out filter coffee. Selected and lightly roasted for clarity, character and taking your time.

It has no espresso duties. It doesn’t need to cut through milk or keep a café queue moving. Its only job is to make a really good cup of filter coffee.

The coffee changes with each album. The format remains.

Put a record on. Let it finish.
